Second: Is it really necessary to kill the sendmail process?
Couldn't it be possible to block mail for the site you want to move?
Has anyone tried this before?

It won't hurt to kill the sendmail process, no msgs, will be lost.
They will come into the new server, when you get it running.
It takes 4 or 5 hours before the initiator of a msg gets a warning
about delivery.

The problem is, that there are a few (>40) more webservers on the
machine and I do not want to block msgs for them too. Is it possible to excecute the cmu with a running sendmail process? I thought the cmu only
cares about the site that should be moved.



As its been explained by others...

You WONT lose any emails. There's no reason for you to leave it running.

Killing off sendmail for a few minutes isn't going to make you miss/block any messages at all - the remote MTA's will keep retrying for hours.
