I don't quite understand the statement about webservers on the machine (meaning virtual hosts??)

However if you don't stop sendmail you run the risk of missing some emails. Picture this, you run cmuexport and just as it finishes an email comes into the mailbox of the site you exported. cmu doesn't know this, and cannot stop email on a site-by-site basis, so that mail won't get copied and will be resigned to fdisk when the server gets trashed.

Its the same no matter what type of box this is, slakware, cobalt, redhat. You'd need to do the same type of process.
