Not entirely sure where you are coming from here!
I have tried the usual derivatives of su
Su
Su -
Su -l
Etc
I understand how to SU
I also understand how to use the uninstaller.
My question was...how come when I have done exactly what you have
described I get the error "Permission denied" ?

You need to know the owner/group of the file by listing the files using
ls -l
BUT first do this:
su -
enter root password
cd /var/lib/cobalt/uninstallers
then type:
./ThePackageNameYouWantToUninstall
and press Enter
