Hi Matthew,
You might be able to delete the squid cache
cd /home/squid2/cache;rm -Rf *
and then recreate it using
/home/squid2/bin/squid -z
This might solve the problem, however it might also be due to the version of squid, since the maximum cache size doesn't work correctly on the default squid versions.
I wrote a faq on how to re-install squid with the new version/patches, follow the url in my sig and go to HOWTOs
