Your log files are rotated by logrotate. Look in /etc/logrotate.d and
/etc/logrotate.onboot. You'll find the scripts that control you logrotation
for each virtual site and other system logfiles. Change the config files to
your liking and back them up. Any changes to site quotas in the GUI will
overwrite you custom config files. See man logrotate for configuration
options or search google.
