I think you can run the CMU for that user until you don't see anymore
mail coming to the old server. IIRC, you should change the TTL on the
old server to 10 minutes several days before the move. Once you get
things set up on the new server, change the MX records on the old server
to point to the new server's MX.

I think Steve Werby had a script or command line for copying users
email. Perhaps he'll post it.
