Well it depends on what you mean a 'mail server'!!
Pop mail is short and sweet and a host can handle a great deal of pop
accounts...
Running the queue for sendmail can be very consuming for a large system
since sendmail will spin on the mqueue directories very hard. In the
past when disks were slower than they are today, we have had to strip
disks together for large queue machines to get the performance of the
mqueue scanning...
To summarize, if you mean mostly pop mail for a mail server than no
problem for the kind of machines you listed below...
If you mean a SMTP queue host than you need good disk performance in the
queue directories..
