(it's the same IP to ANYTHING) and so that all our hotels also changes
their IP....

It depends on what you call "all services".
Be more specific.
If you are only running web and mail, when you change the ip on the machine
all the ips change.
If you are running dns and possibly other services, then there is more to do.
When I moved my computer to a new site, I changed the IP and gateway and
all the sites went along. I did have to change the dns, not on my server,
to point to the new ip for each url on the server. This took a bit
more. This is also where you can loose service while it propagates.
