Don't dismiss Interbase so promptly. It is by far the most powerful of all
the three, it is very easy to administer and is the only real enterprise
level database of the three. If you want to learn a proper database, learn
Interbase, as it has all the features a high end database should have.
Everything you will learn will be of use with Oracle MSSQL Informix DB2 and
the like. It will be useful also for MySQL, though you will miss a lot of
features as MySQL is very limited.

If you just need to administer a SQL database as a hosting company, go for
MySQL, as it is the most successful product and it will be enough for most
clients..

If you want I can mail you some pointers to Interbase articles and tools.
