If you just want to do a send of plain text data send from a completed form,
this works:

<FORM METHOD="POST" ACTION="mailto:someone@xxxxxxxxxx?subject=Something That
Makes Sense Here" ENCTYPE="text/plain" onsubmit="return
(Form_Validator(this));"  NAME="sender">

(the rest of the form here)
</FORM>
