I haven't actually read the instructions you're referring to, but I presume
it's talking about setting up an A record, not an MX record.

You don't. You set them when creating an A record. When you setup an MX
record you just specify which mail server handles email for your host. The
mail server just needs to be a valid host on your server (something you
setup an A record for).
