Simon, it sounds like you need to do some homework. I'm sure you could find
some good Linux/Unix tutorial books at Amazon or use Google to search for
some. I found this with a quick search:

tar is the program you use and the -cvpf are the options or switches that
you're giving tar. When you ssh into your machine type "man tar" without the
quotes and that will bring up the tar manual pages. Press q to quit. You can
do this with most of the applications on your server. Just type man anything
to see the manual pages.
