While I'm not sure about fixing the log problem, you can run tail -f
/var/log/maillog and send mail to the user to see what's happening. My
guess would be, (without knowing the DNS or domain name), that somehow
the virtual domain is missing from the relay mail for field in the email
control panel.
Lately I've been keeping that tail -f running and occasionally pasting
the contents to a text screen to look it over and blocking lots of
spammers based on dictionary attacks and some notorious open relays.
