It doesn't matter whether your MX records point to members of the domain
or not, so long as they point to something that is resolvable and not a
CNAME.
You can set the priority in the DNS Administration. In the primary
service list, add an MX record for your domain, setting the priority to
20. This will be your primary server.
Now, do this again, except this time, you choose a different priority
for the backup server. If for some reason your primary server is not
available, the next-highest priority server will be used.
