This is very basic DNS stuff. See the DNS-HOWTO[1] and learn DNS.
To directly answer your problem, you want to set to MX records for the
client's domain, with the primary server given a higher priority than
the backup server. A zone file that reflects this functionality would
look something along the lines of:
IN MX 10 primary-mail.domain.com
IN MX 20 backup-mail.domain.com
