It's a flexibility issue, for me anyway.  By setting up your DNS/MX
thusly, if you need to migrate mail handling capabilities off the Cobalt
itself, all you have to do is modify the A record for mail.domain.com to
point to a different server.

Also, internally on the Cobalt, everything is handled by default at the
www.domain.com level.  Other hostnames etc are handled through server
aliases (email and web server) internally.  Those "aliases" need to be
represented externally via DNS "A" records, etc, so that the services
work properly...
