The first one is in production so i can't stop it (my DNS and mail server).

It can be stopped briefly without causing too much trouble.

People trying to send mail from it will have to try again and incoming mail will retry for 4 to 48 hours usually.

1/2 hour of non service is not generally unreasonable for 'monthly' maintenance.
