I haven't tried this, but it worked on a standard redhat box.
create an empty /etc/raidtab file (mv the old one) touch a new one.
change the partition types from 0xfd to 0x83 to say that it is an ext2
partition.
reboot.
Go to add storage in the gui and add the second drive.
Or, get a restore CD without raid.
