If you were used to make a regular back-up with a better
backup solution then the one proposed by the RaQ3 system
then the only thing you'll have to do is restore your backup.
Concerning the e-mail problems if you specified two MX records
for your domain the second server will handle the incoming
mail during the backup. Then use an SMTP-batch to fetch that mail
