Before I hit send earlier I meant to suggest you investigate procmail and
formail.  You can use formail to add/replace header lines so you can replace
From: and whatever else you want.  You might need/want to do so from
procmail.  If you search google for "procmail recipes", "procmail tutorial"
and "formail usage" and spend an hour or two studying what you find you
should have your solution.
