You should already be able to use ANY "A" record on the server (same IP only) by default!
so they should already be able to use "mail.mountain.co.uk" as pop3/impa/smtp server name!
That assumes you have set "mail.mountain.co.uk" up as an A record already. If not, do so in the normal way you would for a "www" one.
Its the customers account name that is important / IP
