IMAP is a mail retriving protocol, not sending (I think ;p) - I believe
sending is done via SMTP. Anyhow, what recieves mail on your cobalt is
the smtp server (port 25) - closing either pop3 or imap won't result in
problem recieving mail to the box (although if you close both of them,
users will have to have shel access to read their emails)...

now, removing imap is simple, you need to change one file and restart a
service.

But then, Active Monitor will start complaining. You can disable that too,
by editing another file.

The problem is that every time you'll click "save changes" in the control
panel, the GUI will overwrite the above file, and Active Monitor will
happy to annoy you again ;)

So, you need to change the backend script of the GUI...
