If you're starting out fresh, just use a seperate IP on each site.
The only difference, at least for this conversation, is that name
based hosts share a IP address and IP based hosts do not.
If, however, you are currently running named based hosts and wish to
switch to IP based hosts, then crank the TTL down to a minute or
two on the hosts you're going to change a few days before you'll be
changing them, then change the IP address and revert back to the
default TTL.
