Dear God, don't do *that*! It would be the stupidest thing you've done
in a while.
Open-relaying will work fine and you'll have no problems and you'll be
very happy... so you'll decide to keep it that way.
Then one day a spammer will find your box, send so much shit through it
(meant literally) it won't even be funny, overload your server until
it's useless to you, who paid for it and stays up all night caring for
it, gets you into the ORBS RBL blackhole list, destroys three days of
your life cleaning up the server (see Dom's comment), and another week
of your life in the aggregate defending yourself from people who hate
you because *your* domains were forged in the From headers.
Finally, you'll just lose many potential customers who hate spammers and
think you are one, plus you'll lose access to a lot of networks who will
lock you out.
My advice: save yourself the pain. If you choose to go the open-relay
route, expect no help from me. But do let me know if you do this: I'll
just blacklist you preventively and save myself some trouble. :(
