Hi Rich,
One way to 'skin this cat' could be to use "cronolog", and that'll keep any number of seconds/minutes/hours/days/weeks/months/years etc worth of logs, although you will have to delete them yourself when they get old, or write a script to automate it for you and run from crond.
I installed "cronolog" sometime back on my raq3, and it works well, keeping **copies** of the access logs in realtime and places them in the chosen sites logs dir. It also can be setup to not interfer with webalizer (if you use it), which was important for me.
