Okay, I have to ask -- why the "-" after "su"?  I've always just typed "su"
without the dash, and it works just fine.  What's the difference?

"su -" loads all environment settings for root. Normally, /usr/sbin isn't in everyone's PATH environment, so just doing "su" won't necessarily give you direct access to executables you would want/need to run as root (without typing "/usr/sbin/<whatever>").
