it`s generally one pop server (maybe more processes), but you can let
several dns entries point to the ip(s) the server listens on.
maybe mail.domain.com, pop.domain.org etc. i`m not sure if you have to
make a records (i assume that) or cname entries in the dns, as i`m not
very experienced with dns. simply try both, first a, then cname, you can
break nothing. don`t forget to restart dns.
