I'm not sure I understand why you think this will interrupt either dns
or mail service.

Do you point any MX records at all to the current 'hostname.domain.com'
of the box?  If so, then as soon as you change the 'hostname.domain.com'
of the box to something else create a virtual site with the old
'hostname.domain.com' identity.  If this won't work for some reason,
then create a new MX record (with a lower priority) to the new
'hostname.domain.com' box identity BEFORE you make the change), then
after you've made the change, delete the MX record for the old
'hostname.domain.com' and then change the MX record for the new
'hostname.domain.com' to the highest priority.

Do you have any name-server registered with any registry with the old
'hostname.domain.com' name?

If so, then first you need to decide if you want to keep this
name-server name or not.  If you do, then simply create a virtual site
for the old 'hostname.domain.com' right after changing the box's
identity.  If you don't want to keep this name-server name, then just
register a new one with whatever hostname.domain.com you want, and
change all your root records for all your hosted domains to use the new
name-server BEFORE you make the changes.  (Of course you may need to
create a new virtual site for the new name-server.

Strictly speaking, you don't need a virtual site for the name-server
name, but you do need to answer for at least one site on your RaQ at the
IP# you're using the for name-server, or else the RaQ won't answer any
requests to that IP#.
