Probably sendmail stopped accepting mail when the server load was too 
high (check uptime to see load averages) or number of connection per 
second was too high... 

You may try to put 
@xx.co.za 	DENY

to your /etc/mail/access
and rebuild the access.db

(I don't remember in what version first this feauture has appeared)

Another thing you can do is to activate dnsbl (relays and proxies) 
service, so 85% of those connections will be refused.
