This is the classic "no mail server alias defined" problem.

Make sure the Mail Server Alias field in the site settings has "example.com" filled in. Without it, only mail for user@xxxxxxxxxxxxxxx will be accepted. With it, mail for user@xxxxxxxxxxx will be accepted as well.



This is exactly the problem I had - the gui disappeared - when I rebuilt it, all the email domains had disappeared from:

Control Panel | Email Server | Relay for the following Domains/Hosts.

They were all present in their www. form in Host/Domain Aliases, but GONE from the Relay for section. Additionally, all ADDITIONAL domains were gone... ie, if a host had multiple domains pointed to it, anything except the primary was GONE.

I found no way to get these back APART from by hand from our paper records. It was a PITR.
