This is exactly the problem I had - the gui disappeared - when I rebuilt it, all the email domains had disappeared from:
Control Panel | Email Server | Relay for the following Domains/Hosts.They were all present in their www. form in Host/Domain Aliases, but GONE from the Relay for section. Additionally, all ADDITIONAL domains were gone... ie, if a host had multiple domains pointed to it, anything except the primary was GONE.
I found no way to get these back APART from by hand from our paper records. It was a PITR.
