Sure can.  MTAs don't care what domain they're receiving mail for.

Create an MX record in DNS for domain1, for domain2, and for domain3, all pointing to mail.domain1.com.

In virtusertable, under the line Cobalt has so nicely put there for our benefit, put in entries for domain2 and for domain3, in each case pointing towards users you've set up on the RaQ. The users can be under any domain, it really doesn't matter.

Of course the users have to log into mail.domain1.com with their MUAs (mail clients) to read the mail.

Alternatively you can also create A records for mail.domain2.com and mail.domain3.com, pointing at the same IP# as domain1.com, and then the users can long into mail.domain1.com or mail.domain2.com to read their mail.
