I thought it made a lot of sense. If you set up mail.domain.com for all
email on the server and the mail load became heavy, it would be easier to
assign mail.domain.com to another IP on a separate box and point all the
mail to that. If you set up all MX records as domain.com and the mail load
became heavy, it would be a lot more difficult to go back through all the
records and change things to move mail to another server.
