I am very happy with Gentoo. Aside from the years of my life lost
installing Gentoo. :) Once beyond initial install it's great.

No.

My plans are to turn this in a information, file, and database server. I
have little use for the web interface these days. It does not support
the versions of software I want to use and would take way to much time
to port. I will be very happy to be able to do what I want with the
machine without fear of breaking the ui or crippling the machine.

More time than it would take to configure all things manually.

As I acquire other machines and hardware I may use what ever the new
admin tool is for the old Cobalt machines and new appliances. I have
seen many other talking about ports or new versions. That's the
direction I would go if any.

However I see myself more writing custom admin programs. Since in the
end I run a private network. When my clients access my servers and
network they do so via software custom developed in house for their
specific needs.

Most of the Cobalt gui really did not apply or help out in that matter
at all. Just got in the way.
