You can use the regular Cobalt Administration Tool to add sub-domains,
even after adding DNS wildcards. Cobalt doesn't care.

Maybe, but there isn't.
It can be done, and it's not that hard (check the archive of the
cobalt-users list, where several step-by-step guides has been sent).
Though it's not actually "easy".

Add an A record to the DNS, with the name of "*" pointing to the ip of
your liking.
